I have been a recipe collector and have way too many cookbooks and pages torn from magazines! I am on a quest to organize, clean out and simplify my recipes and to get back to an organized meal planning and preparation system! Recipes on this blog will have to pass the "taste test" of my family and will need to be fairly simple to make and of reasonable expense. There is also a desire to use whole grain foods and other long term food storage items!

FUDGY BROWNIES

FUDGY BROWNIES

3/4 C unsweetened cocoa powder
1/2 t baking soda
1/3 C vegetable oil
1/2 C boiling water
2C white sugar
2 eggs
1/3 C vegetable oil
1 1/3 C flour
1 t vanilla
1/4 t salt

Preheat ovent o 350 degrees.  Prepare a 9x13 baking dish with cooking spray.
In a large bowl, stir together cocoa adn baking soda.  Add 1/3 cup oil adn boiling water.  MIx until well blended and thickened.  
Stir in the sugar, eggs, and remaining 1/3 cup oil.  Finally, add flour, vanilla, and salt; mix just until all of the flour is absorbed.  Spread evenly into prepared pan.
Bake in teh preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.  Allow to cool before cutting into squares.

NO BAKE COOKIES

2 C sugar
2T cocoa
1/2 C milk
1 cube butter
Pinch of salt
3 C oats
1/2 C peanut butter
1 t vanilla

In saucepan, combine sugar, cocoa, milk, butter, and pinch of salt.
Bring to a boil and boil for 1 minute.
Remove from heat and add oats and peanut butter.
Stir until all combined.
Drop by spoonfuls onto waxed paper and let cool.

Makes: 4 dozen

RAVIOLI SOUP

RAVIOLI SOUP

1 lb ground beef
1 (16 oz) can green beans
1 (16 oz) can kidney beans
1 (16 oz) can white beans
1 (16 oz) can pinto beans
1 (28 oz) can Italian tomatoes
1/4 C parmesan cheese
2T beef soup base
1 6 oz can tomato paste
1 12 oz bag frozen ravioli
3/4 t  onion powder
1/2 t  dried basil
1/4 t  thyme
2 t  garlic powder
1/4 C dried parsley
1/4 t  oregano
Water as needed

Brown hamburger and drain.
Combine all ingredients, except ravioli, in crock pot.  Cook on low for 3-4 hours.
Add ravioli the last hour.
NOTE:  can substitue macaroni or other pasta for the ravioli

BORSCHT

BORSCHT
1-2 pints shredded beef
1 large onion, diced
8 C water
2 bay leaves
4T beef soup base
2T butter
6 large carrots, shredded
1 small head cabbage, shredded
2T lemon juice
4T sugar
8 large potatoes or 3-4 cans whole potatoes, diced
4 large tomatoes or 2 cans crushed tomatoes
1/4 t dill
1/4 t parsley
2 cans shoestring beets
Sour Cream for topping

Saute' onion, cabbage and carrots in some olive oil.  Combine all ingredients in a large stock pot, except for sour cream.  Simmer until all vegetables are tender.  Serve in bowls with a dollop of sour cream.

BEEF AND BARLEY SOUP

BEEF AND BARLEY SOUP

4 stalks celery, diced
1 large onion, diced
3t garlic powder
1T olive oil
1 pint shredded beef
2C cooked barley
2 quarts crushed tomatoes
1T beef soup base
salt and pepper to taste

Saute' celery, onion and garlic powder in olive oil until tender.
In large stock pot combine all ingredients and stir until combined.
Heat and simmer about 15-20 minutes.  Salt and pepper to taste.

NOTE:  You can add other vegetables such as shredded carrot, shredded cabbage, etc.

PASTA ROSA

PASTA ROSA**
This is one of our family's all time favorites and you can't find a more delicious recipe that is quite so easy!!


1 lb Penne Pasta (or other shaped pasta)
1 jar Alfredo Sauce
1 small jar of sun dried tomatoes or roasted bell peppers

Cook Pasta according to package directions.
While cooking, chop the tomatoes or peppers in a food processor or blender until chopped to desired consistency.  Drain pasta then pour into a large bowl or pot.  Add Alfredo Sauce and chopped tomatoes or peppers.  Mix thoroughly and serve immediately, hot.  You may also pour into a casserole dish that has been sprayed with cooking spray and keep warm or reheat when ready to serve OR put in  crock pot on warm until ready to serve.

Optional:  top with grated Mozzarella Cheese and parsley sprigs to look pretty!
Optional:  You could always add cooked, diced chicken as well
